Sweet bakery expert Dawn Foods has devised an instant choux pastry mix to aid bakers and caterers who have been put off using this versatile, popular but complex pastry due to skills and HACCP issues. You just add 1.5kg of cold water to each 1kg of mix to produce a ready-to-use batter in less than 10 minutes. The mix is sold in a 10kg pack.
