INGREDIENTS
(serves about eight)
1 x 200ml cup dried lavender
2 litres boiling water
125ml mineral water
250ml stock syrup
50ml lemon juice
METHOD
Put the lavender into a bowl, pour boiling water over it and infuse for six minutes. Strain. Measure 250ml of the infusion and combine it with mineral water, stock syrup and lemon juice. Put into a shallow container and freeze. As the mixture freezes, fork the ice granules from the side into the centre to make a granita texture.
