Mastermind combi ovens from Valera
The rapidly emergent technology of RFID (radio frequency identification) has been adapted by Leventi on latest Mastermind versions of its Combimat 4 combi-steamers. Users transfer data such as new dishes, seasonal menus and specials to each oven's memory without any wired connection, simply by swiping Protag cards across a card reader on the oven. For instance, a development chef at head office can create a master card and then send a copy of that card to every restaurant in a chain. Programming software on each oven allows up to 200 recipe or menu programmes to be stored.
Mastermind ovens are made in four, six, 10, and 15 grid sizes in electric versions only, and prices start at £6,699. Standard features include cook and hold, easy-access control box with filtered air cooling and boiler with a flushing system designed to combat calcium build-up. For Combimat and other freestanding ovens, Leventi has developed a low-maintenance extractor hood including versions with a continuously scrolling electronic display to flash messages at customers in front-of-house cooking locations.
