Melon and chinese ginger marmalade

Ingredients

1½kg peeled and seeded diced honeydew melon
200g Chinese pickled ginger finely diced
5tbs juice of pickled ginger
50g light brown sugar to taste according to the sweetness of the melon
565ml white wine vinegar
½tsp Chinese five-spice powder
2tsp Dijon mustard

Method

Mix all the ingredients together and leave to macerate for two hours. Place over a moderate heat and simmer for 30-45 minutes until all the ingredients are soft. Put together in a food processor and return to the pan for a further 10 minutes until it has a smooth thick consistency.

Bottle and store in the cold room. Leave for one week before use. It should last for about a month refrigerated but keep an eye on it as melon has a tendency to fizz.
