The two leading hospitality figures will bookend the event with inspirational insight into the world of front of house and life in the kitchen.
Galetti (pictured) will share her culinary journey from her native New Zealand to a 12-year stint at iconic two-Michelin-starred London restaurant Le Gavroche, which she left in March this year.
The author of Monica's Kitchen will outline the challenges and rewards of balancing her role as a chef and mother of one with a flourishing media career as a judge on the BBC's Masterchef: the Professionals, while also giving delegates a glimpse into her plans to pursue a new venture in London.
An ambassador for the hospitality industry, Brazilian-born De Tarso will give delegates an insight into how his career has shaped his passion for front of house.
He began his hospitality career aged just 16 before working his way up the career ladder in top restaurants in New York, Los Angeles and latterly London, assuming the role of senior maître d at chef Daniel Boulud's Bar Boulud at Mandarin Oriental Hyde Park since it opened in spring 2010.
The Foodservice Forum will take place on Friday 25 September at Kings Place in London's King's Cross and is regarded as one of the most informative, valuable and enjoyable dates in the foodservice calendar.
Delegates are invited to submit questions for The Caterer does Question Time, hosted by Sodexo's David Mulcahy and featuring a panel of experts including the British Hospitality Association's Ufi Ibrahim, Kate Martin from the Brookwood Partnership, CH&Co's Caroline Fry and Oliver Cock from Compass Group.
They will have the opportunity to learn about the latest and forthcoming food and beverage trends from the Food People's Charles Banks, and how to relate to the next wave of consumers known as ‘generation Z', from the Pineapple Lounge's Emma Worrollo.
