Mutton Renaissence and Defra release guide to meet demand

Mutton Renaissance and the Department of the Environment, Food and Rural Affairs (Defra) have released a new booklet hoping to satisfy those hungry to find out more about supplying mutton.

The 24-page booklet called A taste for marketing mutton aims to satisfy the growing demand for information about mutton.

It is a guide for producers, processors, butchers and chefs and contains a revised product specification, case studies, advice on finishing and pricing, and includes several recipes.

Chris Southgate, of Defra's livestock strategy division, said: "Little appears to have been written about mutton for over 50 years so it's unlikely that the booklet will answer everyone's questions. Instead it encourages the industry to engage with the campaign."

Mutton Renaissance counts has around 200 businesses across England and Wales as its members and has the Royal Highness The Prince of Wales is its patron.

A forward from Prince Charles appears in the booklet.
