Offbeat cheeses

Paxton & Whitfield has introduced a new range of Italian artisanal cheeses, including some lesser-known varieties such as Tuma rusa from Piedmont, a 200g sheep's milk cheese with a pink washed-rind skin. Also from Piedmont is the 200g Rabioli tre latte, an unpasteurised cheese made with three milks (cows', sheep's and goats') to give an almost sweet, creamy flavour. Also included is pecorino fiore sardo from Sardinia and a Gorgonzola piccante.

Prices: Tuma rusa, £5.10 each; Rabioli tre latte, £6.10 each; Gorgonzola piccante £15.30 per kg
