Oyako don

Ingredients

100g chicken breast thinly sliced
2 medium-sized eggs beaten
¼ length spring onion thinly sliced
¼ onion thinly sliced into ½ rings
5tbsp dashi
1tbsp Mirin (Japanese cooking sake)
1tbsp soy sauce
100g Japanese white rice cooked in usual way
1/8 sheet Nori (paper made from black seaweed) cut into thin strips

Method

Mix liquids in frying pan. Add chicken and bring to boil until chicken is almost cooked. Add onion and spring onion. Add beaten egg and cook until it begins to be firm. Place rice in warm Donburi (large Japanese bowl) serve oyako on top and garnish with Nori.
