Foodservice firm Rhubarb has announced that it will be providing the Roux-family-designed catering at the Square Mile Salute, taking place this Friday in London's Guildhall.

Created by restaurateurs and chefs Albert Roux OBE and Michel Roux Jr, the banquet is set to raise money for armed forces charities, including the Royal British Legion, Help for Heroes, and the Royal Navy and Royal Marines Children's Fund.

Silvano Giraldin, director of Le Gavroche restaurant, has chosen a wine menu to accompany the four-course banquet of which will be served in the Guildhall, along with a Champagne reception, coffee, and petit fours. Dishes will include game terrine, pistachio and pomegranate beef tournedos, and girolles with port and red wine jus.

The Square Mile Salute is now in its third year, with top chefs involved including Le Gavroche's Monica Galetti, chocolatier William Curley and Adam Smith from the Devonshire Arms.
