Skate with Jersey potatoes, fresh peas and caper dressing, by Anton Edelmann.

INGREDIENTS
(Serves four)

  • 4 x 140g skate wings, trimmed
  • Little olive oil
  • 400g Jersey potatoes, boiled
  • 160g fresh peas, blanched
  • 1 handful of mixed lettuces
  • Salt and pepper
  • Balsamic vinegar (optional)
  • Caper dressing
  • 100g fine capers washed and roughly chopped
  • 2 shallots, peeled and finely chopped
  • 3 tomatoes cut into ¼ then pips removed then cut into dice
  • 100ml white wine vinegar
  • 300ml good olive oil
  • Chopped herbs(chives, flat parsley, etc)
  • Salt and pepper


METHOD

Dry the skate on a kitchen towel

Season and fry in a non-stick pan until golden brown and done.

Heat the potatoes and peas and add a little of the caper dressing to season.

Place on plate arrange skate on top and spoon some of the warm caper dressing on top. Drizzle with the balsamic vinegar. Mix the lettuce with a little of the caper dressing without the capers and place on top.
