Spam in the hole

Ingredients
1 x 340g can Spam
1 tbs vegetable oil
1 onion, sliced
100g plain flour
150ml milk
2 large eggs

Method Preheat oven to 220°C. Chop up the Spam and place it, with the oil and onion, in a roasting tin. Place tin on baking sheet and bake for 10 minutes.

Place remaining ingredients together in a large jug and add a pinch of salt and pepper. Beat together until smooth, and set aside.

Remove tin from the oven, pour in the batter, then quickly return it to the oven and bake for 30-35 minutes, or until golden and risen. Serve at once with onion gravy.
