Sri lankan curry powder


100g coriander seeds
25g black peppercorns
8 cloves
8 green cardamoms
8 sprigs of curry leaves
20g lemon grass
25g rice flour
50g fresh scraped coconut
3in of cinnamon stick
25g fennel seeds
25g mustard seeds
150g whole driedchilli
20g fenugreek seeds
20g tumeric


Dry out the coconut and lemon grass in a warm oven then grind to a powder. Keep in an air-tight container.

To make roast curry powder heat the ingredients till the colour starts to change then grind as for ordinary curry powder.
