Delegates are welcome to attend either day, at a price of just £150 per day.
Oliver Peyton will be explain how he has grown Peyton and Byrne and discuss his role on the Great British Menu.
Meanwhile, Galvin at Windows general manager Fred Sirieix will be joined by Manager of the Year Catey Winner Peter Avis, restaurant manager of Babylon at The Roof Gardens, to discuss how to develop a team and mould them into the managers of the future.
Through a series of panel discussions and presentations delegates will learn the future trends in front of house, how to deliver a contemporary experience that delights and the benefits and pitfalls of joining a brand.
James Stagg, The Caterer content editor, said: "We're bringing together an unrivalled collection of operators and experts to celebrate all that's great about hospitality, and lay down the blueprint that will set your business on course for a successful 2015 and beyond.
"The first day will appeal to front of house staff, looking to learn from the best in the business. While on the second we are bringing together the best in the hotel business."
