Sweet and sour strawberries with crème fraîche ice-cream
Ingredients
20 strawberries
3tbs caster sugar
4tbs Cabernet Sauvignon vinegar or red wine vinegar
1 vanilla pod
1 pint vanilla custard
1tbs crème fraîche
Method
Place the strawberries in a pan sprinkle with a little olive oil and caster sugar and add the seeds from the vanilla pod. Place on the heat until sugar starts to melt then transfer to oven. Remove from oven after 3-4 minutes and add the vinegar.
Serve immediately with crème fraîche ice-cream.
To make theice-cream churn the vanilla custard in a sorbetière and just before the ice-cream reaches the correct consistency add the crème fraîche. Continue to churn until you have a light creamy ice-cream.
