Sweet pepper and bacon stew
Ingredients
(serves four)
1 large red yellow and green pepper seeded and thinly sliced
2 medium garlic cloves peeled and crushed
2 medium onions thinly sliced
3 large smoked back rashers of bacon thinly sliced
1tbs home-made chutney
1tbs olive oil
1tbs dry white wine
¾ pint of chicken stock
Seasoning
Method
In a heavy-based covered saucepan cook all the ingredients without seasoning.
Bring to the boil and simmer for 20 minutes. Taste season and keep warm. Serve in flat soup plates withthe carved chickenon top.
