Sweet Potatoes – by Michael Connor
INGREDIENTS
4 sweet potatoes
4oz butter
3oz sultanas
3tsp honey
1tsp ground ginger
2tsp ground cinnamon
1 orange zest grated
1 lemon
2fl oz water
Salt
METHOD
Wash slice and parboil the sweet potatoes. Gently melt the butter in a heavy pan and stir in the honey and sultanas. Cook for a few moments until completely mixed and then add the cinnamon ginger salt lemon juice and orange zest. Add a little water to produce a coating consistency and then add the sliced potatoes. Cover the pan and simmer until cooked about eight minutes. During cooking turn and stir as required.
