BUYER'S CHECKLIST
â- GAS OR ELECTRIC? Gas-powered fryers may be dearer to buy than electric fryers but they can be cheaper to run. However, electric ones are easier to install and can be re-sited easily
â- ONE FRYER OR TWO? If trade varies day to day, consider buying several smaller units rather than one large one: it may save on running costs as some can be switched off in quiet periods
â- OIL Don't skimp on oil quality, and change it regularly. When draining, ensure the oil is cooled down before you start. Keep testing the oil to ensure its quality (and that of the food you serve)
â- FILTRATION Filter systems remove the contaminants that cause undesirable flavour transfer and oil breakdown. Integral filtration, built into the fryer, is very convenient but a separate system can be used with all of a site's fryers
â- SIZING If frying less than 30kg of fries per hour, a counter-top fryer should be enough. Larger operations should consider full-size floor models or batteries of fryers
