Take Five Fryers

Take Five Fryers

Fryers are traditionally energy-guzzling pieces of kit, so it is important to determine what fuel source and size of model best suits your business needs. Oil quality is essential to the finished product, so it is worth looking closely at oil monitoring and filtering technologies. Here, we showcase five models that cater to different requirements

Fortius FF623

twin-tank tabletop fryer

We say This space-saving, mid-budget electric fryer is built in Britain to fry chips thoroughly to British tastes. Extra large baskets mean the chips are totally immersed in oil and have room to spread out to cook evenly

â- 2 x 10-litre oil capacity
â- Easy-clean lift-out controls and elements

Dimensions 600mm x 600mm x 250mm

Protector Frymaster FPGKl330/FPEL 317
£35,510 (gas)£29,265 (electric)

We say The three tanks in this model (available in gas and electric versions) use just 30lb of oil to achieve the same production capacity as 50lb fryers, saving 40% each time the oil is changed

Features â- Energy Star efficiency rating of 85%
â- Auto-fill Oil Attendant monitors oil and replenishes it from a Jug-in-Box
â- The built-in Footprint Pro oil filtration system extends oil life

Vario Cooking Center 111

We say A great option where space is tight, this multi-purpose, computer-controlled cooking centre also doubles as a bratt pan, kettle pan, griddle, bain-marie and pressure cooker

Features â- Faster than conventional equipment, 40% less energy and 80% less oil
â- Each 15-litre pan cooks 12kg of frozen French fries or 130 fish fingers per hour
â- Food detector and auto-lift features prevent oils from overheating

V600p single-tank electric fryer

We say Also available in marine solas specs for ships, this fryer has an integral pump filtration system that can filter hot oil in five minutes. Uniquely, this can be done when the door is closed, a safer option than with an open door

Features â- Can fry up to 700 portions of fish over a typical lunchtime
â- Delivers up to 68kg of chips per hour
â- Oil capacity of 25 litres

Dimensions 600mm x 580mm x 850/900mm

Opus 700 OE7105/F twin-tank electric fryer

We say This slimline, 400mm-wide fryer has an in-built oil filtration system which extends oil life by up to 75%. This can save operators up to £601 a year and pay for itself within 25 months

Features â- Can fry up to 40kg of frozen chips or 55kg of chilled chips per hour
â- Hinged, lift-and park element with safety interlock for easy access to the tank
â- An inclined tank base and large bore drain aids draining

Dimensions 1,050mm-1,105mm x 400mm x 737mm

â- GAS OR ELECTRIC? Gas-powered fryers may be dearer to buy than electric fryers but they can be cheaper to run. However, electric ones are easier to install and can be re-sited easily

â- ONE FRYER OR TWO? If trade varies day to day, consider buying several smaller units rather than one large one: it may save on running costs as some can be switched off in quiet periods

â- OIL Don't skimp on oil quality, and change it regularly. When draining, ensure the oil is cooled down before you start. Keep testing the oil to ensure its quality (and that of the food you serve)

â- FILTRATION Filter systems remove the contaminants that cause undesirable flavour transfer and oil breakdown. Integral filtration, built into the fryer, is very convenient but a separate system can be used with all of a site's fryers

â- SIZING If frying less than 30kg of fries per hour, a counter-top fryer should be enough. Larger operations should consider full-size floor models or batteries of fryers
