Vegetarian kedgeree, Khichri
Ingredients
100g rice
75g lentils (moong/masoor/channa)
300ml water
30ml ghee/oil
5g cumin seeds
A pinch saffron/turmeric
Method
Wash rice and lentils in running water. Drain and put in a vessel with water and salt and cook over flame. Add more water if necessary.
Simmer until the lentils are cooked. Heat oil in a pan and when it smokes add cumin seeds turmeric and saffron and mix it with khichri.
Vegetables such as cauliflower potatoes peas or tomatoes can be added.
