Wild Boar Sausages, sweet potato mash and caramelised onion dressing to be served with Old Speckled Hen – by Greene King
Ingredients
4 wild boar sausages
Caramelised onion dressing: 1 white onion quartered and sliced
3 tbsp extra virgin olive oil
Salt and freshly ground black pepper
2 tbsp sugar
2 tbsp unsalted butter
2tbsp vegetable oil
Sweet potato mash:
2 sweet potatoes
150ml milk
2 tbsp unsalted butter
1/4 tsp cinnamon
1/4 tsp ground cumin
1/4 tsp dried ginger
Recipe
Cut 2 medium sized potatoes into small, 2-inch cubes and boil in salted water
Drain the potatoes once they are fully cooked
Stir in 150ml of milk and 2 tablespoons of butter
Add 1/4 teaspoon cinnamon, cumin and ginger
Mash until smooth and creamy
Sauté the sliced white onion with extra virgin olive oil until tender
Add the pepper and 2 tablespoons of sugar to the pan and coat the onions evenly
Add 2 tablespoons of butter continually stir the onions until they are brown
Cover the mash with the onion dressing and couple with the wild boar sausages
