Wood-burning ovens from Exclusive Ranges
Two of London's most fashionable restaurant openings of the past year - Nobu Berkeley (reviewed here by Giles Coren) and Gordon Ramsay's Maze - have installed wood-burning ovens to impart a slightly smoky taste to roasted and baked dishes. Australian-made Beech ovens were chosen, with Maze opting for a model with a 900mm internal diameter burning wood (backed up by gas) and Nobu Berkeley operating a larger, 1300mm model which also incorporates a gas charcoal grill. The ovens cost £18,000 and £24,000 respectively. Beech ovens come in a big choice of sizes and configurations, from standard circular models to custom shapes assembled in situ from prefabricated components.
