Joe Holness also cooked at Simon Rogan’s Fera at Claridge’s
London’s Liberty department store is set to welcome a new restaurant with a former Da Terra chef at the helm.
Seventy Five at Liberty is a joint venture with event caterer Goose + Berry, which is also behind the Arthur’s Pop-Up Café on the first floor of the Tudor-revival building on Regent’s Street.
The launch of the restaurant coincides with Liberty’s 150th anniversary year and the new opening will take its name from the year the department store was founded in1875.
The 1,800 sq ft space will offer 84 covers and open daily with a brunch, lunch, afternoon tea and early supper offering. It will also be available for private hire.
Head chef Joe Holness previously worked at Simon Rogan’s now-closed Fera at Claridge’s and the two-Michelin-starred Da Terra in London’s Bethnal Green.
He will serve dishes such as goat’s cheese and almond croquettes; torched mackerel with pickled carrot and chervil sauce; Swaledale chicken breast with salsify and thyme and British Hampshire pork chop and fresh herb salsa verde.
Head pastry chef Lizzie Ross will oversee the afternoon tea menu, which will pay homage to Liberty’s heritage in arts and crafts, while its cocktails will take inspiration from the store’s signature LBTY fragrance series.
The restaurant will be decorated with artworks from an ongoing Artist in Residence programme, starting with cartoonist, illustrator and writer, Sir Quentin Blake, who has frequently collaborated with Roald Dahl.
Hannah Martin, founder of Goose + Berry, said: “Seventy Five marks an exciting milestone for Goose + Berry as our first restaurant venture.
"Liberty is an iconic British institution, and we are proud to bring our commitment to seasonal, high-quality British food to such an iconic setting. Having been heavily involved from ideation, the concept, vision, menus though to the design, I am excited to see the all-day restaurant to come to life in the heart of London.”
Seventy Five at Liberty will open on the second floor of the department store on 8 April.
