Achal Aggarwal has been appointed head chef at the two-AA-rosette Fox dining rooms at Foxhills hotel and country club in Surrey.
Over the course of his career, Aggarwal has trained in Tokyo and New York, having worked across properties including the Leela, Hyatt, and several Oberoi Hotels, which is set to make its UK debut in 2027.
The chef was also heavily involved in the launch of the Wasabi restaurant in Delhi and was previously head chef at Vaasu by Atul Kochhar in Marlow.
At Foxhills, he will serve a fine dining menu showcasing modern British cuisine infused with Indian and Asian flavours. Dishes will include butter chicken with a twist, lamb rogan josh, soft shell crab tempura sushi roll and mango seabass and seafood udon noodles.
Aggarwal has also introduced a series of monthly five-course tasting events focusing on international cuisines, starting with Japanese food. Further menu developments will continue into early 2026.

Foxhills in Ottershaw, Surrey, takes its name from the eighteenth century politician and local resident, Charles James Fox. The Manor House dates back to 1841 and the estate now features 66 bedrooms, three restaurants, five swimming pools, a golf club and numerous other facilities.
