Grigoris Thanasis named head chef of Mauro Colagreco at Raffles London at the OWO

Grigoris Thanasis has been appointed head chef of the Michelin-starred Mauro Colagreco at Raffles London at the OWO.

He was most recently a chef for the hotel’s all-day dining restaurant, Saison, having joined the Whitehall property in March 2025.

Prior to that, he was senior sous chef for Four Seasons Hotels and Resorts, working at the two-Michelin-starred La Dame de Pic, which closed at the end of February after eight years of trading.

Thanasis has also worked across Mauro Colagreco Group and at the three-Michelin-starred Odette in Singapore.

Colagreco, who is also behind the three-Michelin-starred Mirazur in Menton, France, made his UK debut in September 2023 with the launch of three restaurants at Raffles London at the OWO.
