Greatest inspiration Gary Rhodes, for the way he put British cooking on the map.
Ambition To deliver fantastic food, and achieve a third rosette and a Michelin star at Bowood.

Daniel Moon worked in the kitchen of St Olaves and Holne Chase in Exeter, before moving to Bath in 2002 to take up the role of head chef at Hunstrete House.

Four years later, he moved to Homewood House, where last September he was awarded his third AA Rosette. In addition he was twice Von Essen chef of the year.
