Auberge du Lac appoints head sommelier
Auberge du Lac, the restaurant that sits within the Brocket Hall Estate in Hertfordshire, has appointed Marjorie Cropp-Legendre as its new head sommelier.
Originally from Bordeaux, Cropp-Legendre started working with wines at La Trompette in Chiswick before taking the role of assistant head sommelier at the Glasshouse in Kew.
In 2008 she moved to Harvey Nichols as head sommelier, where she stayed for seven years.
Cropp-Legendre will work closely with Auberge du Lac's head chef Marcus McGuinness to create the perfect food and wine pairings for the tasting menus.
She also hopes that the tasting menus will allow her the opportunity to introduce guests to more unusual wines that the restaurant is not currently known for.
However, her focus will be on developing a classic list of Bordeaux and Burgundy, both in reds and whites, with some lesser-known regions, countries and grape varieties included.
