Dan Kenny to oversee F&B operations at Artist Residence Brighton

Chef Dan Kenny is taking over the entire food and beverage operation at the Artist Residence hotel in Brighton.

Kenny opened the Set restaurant with co-founder Semone Bonner adjacent to and in partnership with the 23-bedroom hotel in 2015. A café was added to the restaurant in 2016, and in March 2017 Bonner left to pursue new projects.

The café has been refurbished and rebranded as the Set bar, with a focus on drinks and a tapas-style snacking menu to provide a more informal dining option alongside the restaurant.

Kenny will now also oversee the rebranded Fix cocktail bar within the hotel (formerly occupied by the Cocktail Shack), serving a pared-back menu closely connected to the food offering at the adjoining restaurant.

The restaurant will continue to serve seasonal set menus. Later this year, an outdoor terrace will be launched in the restaurant's herb garden, and a new breakfast menu will launch in March.

Kenny said: "The Set has had a great three years and we're excited to continue to push forward. The new offerings will have their own identity and will offer a different choice to the set menus in the Set restaurant."
