Dan Miles appointed head chef at No15 Great Pulteney in Bath

No15 Great Pulteney in Bath, the newly opened hotel from the Kaleidoscope Collection, has appointed Dan Miles as head chef (inset).

Miles joins the 40-bedroom hotel, which prides itself on its idiosyncratic and innovative design, from the Gainsborough Bath Spa hotel, where he was sous chef.

Earlier roles for Miles included two years as chef de partie at La Trompette in London, pastry chef at L'Ortolan in Reading and commis chef and then junior sous chef at Lucknam Park, near Bath. He began his career at Stapleford Park hotel in Melton Mowbray in his home county of Leicestershire.

Miles describe No 15 Great Pulteney as "one of the most exciting openings" in Bath.

"The quirky yet relaxed atmosphere has so much to inspire new and exciting developments in the kitchen," he explained.

"I'm looking forward to creating simple, accessible, family-style sharing dishes that people really want to eat, using the best quality seasonal ingredients."

Miles will oversee the food in the hotel's Café 15 and Bar 15. The Café 15 menu will feature the likes of poached cod with butter beans infused with chorizo and saffron with garlic aioli and smoked salt; Fowey mussels with leeks, cider and smoked bacon; and shaved courgette salad with goat's curd, watercress, pine nuts and a lemon dressing.

Meanwhile, in Bar 15, he will serve tapas-style dishes such as polenta chips with baba ganoush; quail Scotch eggs with homemade ketchup, and local cheeses.

Ian Taylor, the owner of the Kaleidoscope Collection, said: "We are delighted to be welcoming Dan to the No15 Great Pulteney team. He comes with many exciting food concepts for the hotel and we look forward to seeing him in action."

Café 15 is open every day for breakfast, from Wednesday to Sunday for lunch, and on Friday and Saturday evenings for dinner, while Bar 15 is open throughout the day, seven days a week.

No 15 Great Pulteney is sister hotel to two other Bath hotels, the Abbey and Villa Henrietta Park.
