Deadline looms for entering Roux Scholarship

There are just a few weeks left to enter this year's Roux Scholarship. The closing date for the competition, which offers a three-month stage at a three-Michelin-starred restaurant and a £5,000 cash prize, is 31 January.

Chefs wishing to take part in the competition, now in its 27th year, must submit a recipe using five different types of shellfish for the first stage. Full details are available on the Roux Scholarship website.

The regional finals will take place in March and the national finalists will receive £1,000 each in cash courtesy of the Savoy Educational Trust.
This year's winner, Hrishikesh Desai, head chef of the Brasserie at Lucknam Park in Wiltshire, is the first scholar to take a stage outside of Europe at Thomas Keller's three-Michelin-starred French Laundry in Yountville, Napa Valley, in California.
