Reckon you could challenge competition judge Heston Blumenthal's sherry candyfloss with elderflower mousse and match it with a sherry? Entrants in this year's sherry Sous Chef/Wine Waiter Competition have to create a three-course menu centred around sherry and choose a different sherry to complement each dish.
Ten teams will be chosen to battle it out in a grand final to be staged at this year's Restaurant Show on 20 September.
The prize is £1,000 each plus a gastronomic tour of Andalusia, and the winning pair will take part in an international final in Jerez, the heart of Spain's sherry region, next January.
