Aurelie Altemaire, former head chef at L'Atelier de Joël Robuchon, is to helm the restaurant of the Novotel Canary Wharf in west London, the tallest Novotel in the world, opening in January.
Bōkan, a 65-cover restaurant, bar and roof terrace, will open on the 37th floor of the 313-bedroom, Accor-owned Novotel, and will specialise in modern European dishes made from British ingredients.
Signature mains will include line-caught cod with potted Morecambe Bay shrimp butter and winter roots hot pot with grilled Ragstone goat's cheese crottin. A sharing tile of charcuterie and cheese will also feature on the menu alongside desserts of cox apple and walnut crumble with custard and baked Alaska.
The average breakfast spend will be £15 per person; £30 at lunch; and £50 at dinner, with a bottomless brunch available on Sundays.
The 110-cover bar will be located on the 38th floor, stocking spirits from London-based small batch distillers. Bar snacks such as house made crisps and Biltong will be served alongside burgers, sandwiches and artisan pizza.
