Former head chef of L'Ortolan restaurant Nik Chappell is to to take up a role as head chef of the Tudor Room at Great Fosters hotel in Surrey.

Chappell took charge of L'Ortolan's kitchen in January 2012, having taken over from Elliott Lidstone, and in his time there he helped the restaurant maintain its Michelin star and win four AA rosettes. He left in June 2013.

He will replace Shane Hughes at the Tudor Room, who launched the fine dining restaurant in May 2013 and finished his employment at the end of December.

Chappell's tenure begins when the Tudor Room re-opens after a Christmas recess on Tuesday 21 January.

Richard Young, managing director of Great Fosters Hotel said: "We are extremely proud of the success of the Tudor Room to date and with all the foundations now in place I am looking forward to Nick taking the restaurant to the next level. Having done so well in his career so far, outlined by his achievements at L'Ortolan I am thrilled that he has agreed to progress his career as Head Chef of the Tudor Room."
