France gets its 26th three-star restaurant

The Clos des Cimes restaurant in the village of St Bonnet-Le-Froid was the only new venue to clinch three-star status in the Michelin Guide France 2005, published last week.

Under the guidance of chef-patron R‚gis Marcon, the restaurant has taken the country's total number of three-star sites to 26. The 96th edition of the guide praised the restaurant, which is located 51 miles south of St-Etienne in the Upper Loire region of France, for its "bewitching cuisine" and its mushroom-inspired menu. Joining it on the way up are 11 new two-star sites, including Villa des Lys in Cannes, L'Assiette Champenoise in Reims, and L'Astrance in Paris. In total, the number of two-star sites in France now stands at 70, while 42 new one-star restaurants take the French total to 402. On the way down were the Jardin des Sens restaurant in Montpellier, Languedoc, and Lameloise in Chagny, Burgundy. Both have slipped from three stars to two. It is further bad news for brothers Jacques and Laurent Pourcel, owners of Le Jardin des Sens, who recently opened a restaurant in London to poor reviews. Four restaurants slipped from two stars to one and 43 lost their single-star rating. A new feature in this year's guide are the hopefuls (espoirs) whose entries appear in red. They are highlighted as the best establishments in their category and tipped for promotion next year. According to the new grading system, five are poised for three-star status, 10 are earmarked for two-stars and 18 could get their first star next year. *Source: Caterer & Hotelkeeper magazine, 10 March 2005*
