Hotel Café Royal launches season of guest chef collaborations
Hotel Café Royal will begin a series of international guest chef collaborations at its private members' club from March.
Held in the Domino dining room and dubbed ‘The Domino Effect', the series will see a number of high-profile international chefs collaborating with Café Royal's executive chef Andrew Turner to create monthly tasting menus.
The menus will be available to the public as well as club members.
The first guest collaborator will be Spanish chef Paco Roncero, whose menu will be available from 23 March to 11 April. Priced from £90, the seven-course tasting menu features tuna tartare, squid risotto and scallop with black pudding, capers and raisins.
Roncero is executive chef and director of the Casino De Madrid and its two-Michelin-starred restaurant La Terraza Del Casino. Known for his avant-garde Spanish cuisine, Roncero opened Sublimotion at the Hard Rock hotel, Ibiza, in 2014. The 12-seat restaurant uses projection screens and temperature controls to combine foodservice and performance art.
The Domino Effect's second guest collaboration with be with the Milanese Costardi Brothers, last seen in London for a 2013 residency at Italian installation the House of Peroni.
