Hrishikesh Desai to head up Lucknam Park cookery school
Country house hotel Lucknam Park in Wiltshire is opening a cookery school this autumn to be headed up by former Roux Scholar and National Chef of the Year Hrishikesh Desai.
The Cookery School will be located in a small house on the five-acre Lucknam Park estate, just a short walk from the main hotel building, and will feature a kitchen with six cooking stations for up to 12 guests.
Overseen by Desai and the hotel's Michelin-starred executive chef Hywel Jones, the school will offer 26 different courses ranging from "Michelin Starred Cooking at Home" or "Indian Street Food" to "Health is Wealth" and the "Perfect Afternoon Tea".
The courses will have an emphasis on fresh ingredients and nutrition and many of the dishes will include home-grown seasonal produce from Lucknam Park's kitchen garden and fresh herbs from the Cookery School's herb garden.
Desai told Caterer and Hotelkeeper that a focus on authentic Indian cooking will set the Cookery School apart from other schools. "Indian cuisine is my background and this will be the strength of the school," he said. "We will have a Regional Indian Cooking course in four different segments and it will include unknown cuisines such as Wazwaan from Kashmir, which I'm keen to introduce in the UK."
The one-day Cookery School courses will start from £175 per person including breakfast, lunch and refreshments, and will run daily from Monday to Friday from 9am to 4pm.
