Langham Place hires Samuel Lim as executive sous chef

Langham Place has hired Samuel Lim as its new executive sous chef. Lim's career has taken him from Singapore's Raffles Hotel to the Al Mahara underwater restaurant in Dubai.

Most recently Lim was chef de cuisine at City of Dreams in Macau, where he was responsible for overseeing the Crown hotel's entire kitchen and administrative operations. Commenting on his cuisine style, Lim says: "My approach to cooking is very eclectic - contemporary continental meets South East Asia.

"I like mixing the spices and herbs of both the east and the west and get a lot of inspiration from the three-Michelin-starred Pourcel brothers." As executive sous chef at Langham Place, he will oversee cuisine at four of the hotel's five restaurants and bars, which includethe Place, Tokoro - Robatayaki & Bar, Portal - Work & Play and the Backyard.
