MasterChef-style challenge helps recruit new chef for Tunbridge Wells hotel

Goldin, who was previously head chef of Cantina Del Ponte, part of the D&D London stable, impressed his new bosses by cooking butternut squash and tortelloni with butter, crispy sage and pecorino; black ink cuttlefish risotto; stewed monkfish in tomato sauce; and tiramisu with ripple rhubarb compote cheesecake.
He will now oversee the hotel's 75-cover L'Amore restaurant, which will focus on "Mediterranean small plate dining".
Goldin described the trial for the job as demanding. "I'm looking forward to starting work on the menus and developing my own individual style. With 75 covers, L'Amore is the ideal size for my style of cooking and I can't wait to experiment with new flavours and techniques to provide new combinations."
Louise Clark, managing director of Markerstudy Leisure, the owner and operator of One Warwick Park, said that Goldin's appointment was a key element of establishing the hotel as Tunbridge Wells' "destination of choice" for discerning guests. "From the moment we spoke to Marco, we knew he was the right fit for us. We're delighted to have such a respected head chef on board to help turn our plans into a reality."
During his 20-year-long career - mostly spent in his native Italy - Goldin has enjoyed working stints in St Lucia and Dublin. He arrived in the UK in 2012 as senior sous chef at Daphne's, the Caprice Holding restaurant in London.
Markerstudy Leisure is the owner of a varied portfolio of businesses which includes Salomons Estate, a 47-bedroom wedding and conference venue just outside Tunbridge Wells; a private jet charter company; and a gymnastics academy.
Located is the historic Pantiles district of Tunbridge Wells, One Warwick Park is due to open in June.
