Metropole Hotel continues upgrade with £100,000 restaurant refurbishment

The four-AA-star, 110 bedroom Metropole hotel in Llandrindod Wells, Powys, is continuing a major upgrade programme with a £100,000 overhaul of its restaurant areas, ahead of the hotel's 120th anniversary next year.

The property's latest project includes a major redesign involving new carpets, seating, soft furnishings and Villeroy and Boch tableware. It follows a £5m re-vamp which saw the hotel's 110 bedrooms and 109 bathrooms refurbished and a complete overhaul of the spa, which was renamed as the Rock Spa.

Speaking to The Caterer, hotel managing director Justin Baird-Murray said the restaurant refurbishment was part of an ongoing upgrade programme which had seen the hotel promoted to four-AA-star status. "The spa extension widened our appeal, both to our local customer base and to our overnight leisure visitors. From a tourism point of view, refurbishing the bedrooms - all 110 of them - brought the hotel in line with the demands of discerning modern visitors. Now the latest improvements create a smart, fresh look to the hotel and add to the fine dining experience in our restaurants, complementing the award-winning food created by our head chef and his team."

Head chef Nic Edwards has created a menu to mark the upgrade of the one-AA-rosette restaurant which features locally sourced Welsh lamb and beef, Hafod and Perl Las cheeses and fresh produce from the hotel's extensive kitchen garden.

Baird-Murray and his sister, Sarah Miles, are the fifth generation of their family to own and run the hotel which was purchased by the siblings' great-great-grandmother Elizabeth Miles, 119 years ago in 1897.
