Michel Roux to open restaurant at InterContinental resort in Vietnam

Iconic chef Michel Roux is to open a restaurant in Vietnam, Caterer and Hotelkeeper can reveal.

The owner of the three-Michelin-starred Waterside Inn in Bray, Berkshire, is to open a French restaurant at the InterContinental Danang Sun Peninsula Resort in December.

Embedded in the hills of the famous Son Tra Peninsula, the resort features beachfront villas with private pools and a range of more than 20 suites as well as a range of local and international restaurants.

Called La Maison 1888, Roux's restaurant will be situated in a colonial style house designed by architect Bill Bensley, comprising a 50-cover bar overlooking the sea as well as a main dining room and two smaller rooms with a total capacity of about 70 seats.

The kitchen will be headed up by Stéphane Colliet, who joins from the Waterside Inn where he was sous chef for three years. The head pastry chef will be Stéphanie Aubriot, who also joins from the Waterside Inn. Roux is still looking to appoint a sous chef.

Open for dinner only, the menu at La Maison 1888 will feature eight to 10 starters and main courses and eight desserts. "The food and service will be perfectly French," Roux told Caterer and Hotelkeeper. "The idea is to have a restaurant that is on a one-Michelin-star level."

The kitchen will have a brigade of up to 12 chefs and will be divided into hot and cold sections and feature a rotisserie. The menu will offer local ingredients from the markets, with a focus on poultry and seafood.

"I have spent a lot of time in Asia and I love being there. Opening a restaurant in Vietnam is like a dream come true for me," Roux added. "As a country it is still unspoilt and this is the first time a three-star chef is opening a restaurant there. It is a challenge for me and I will be hands on involved certainly at the beginning until the team is fully settled in."

Roux recently celebrated the 40th anniversary of the Waterside Inn, which is now headed up by his son, chef patron Alain Roux. The restaurant has held three Michelin stars since 1985.
