The Grant SV100 immersion circulator is more versatile than a water bath as it clamps onto any suitable sized pot, so we can use it in a smaller container for service, but if larger amounts are required we can simply clamp it to a larger container. We use it for a huge variety of applications, from cooking perfect lobster in emulsion to tempering chocolate, to 60-hour braises. The machine is available from Grant, and sometimes various online retailers have small discounts off list price. Grant has been amazing for service since purchase, replacing parts without quibble any time a bit has worn out.
