Paul Evans appointed head chef of Mallory Court

The Eden Hotel Collection has announced Paul Evans as head chef of the Dining Room at Mallory Court Country House hotel and spa in Warwickshire.

He replaces Paul Foster, who left Mallory Court in February 2016 to open his first restaurant, Salt, in Stratford-upon-Avon.

Evans joins from the Burlington Restaurant at the Devonshire Arms, Yorkshire, where he held his first head chef position and was awarded three AA rosettes.

His previous experience includes positions at the Lords of the Manor hotel; Upper Slaughter, Gloucestershire; the Michelin-starred Crown at Whitebrook, Monmouthshire; the two-Michelin-starred L'Enclume in Cartmel, Cumbria; and the three-Michelin-starred Waterside Inn, Bray, Berkshire.

Evans said: "Mallory Court has a longstanding reputation for being one of the finest hotels in the country. It has always been a property that I admired and, when the position of head chef arose, there was no doubt in my mind that this was the property at which to make my mark.

Evans' menu includes mackerel served with fennel chutney, black-garlic purée, basil oil and a heritage-tomato consommé; roast breast of Creedy Carver duck with salt-baked fennel, glazed peach and duck jus; and Mallory Garden strawberries with crème fraÁ®che mousse, meadowsweet jelly and strawberry sorbet.

The Eden Hotel Collection consists of nine hotels, restaurants and spas. They are Mallory Court, Leamington Spa; Buckland Tout-Saints hotel and Bovey Castle in Devon; the Kings hotel, Cotswolds; the Arden hotel and Arden House in Stratford-upon-Avon; Brockencote Hall hotel, Worcestershire; the Greenway Hotel & Spa, Cheltenham, and the Mount Somerset Hotel & Spa, Somerset.
