Peter Jackson joins the Clarion Hotel Limerick as executive chef

The Clarion Hotel Limerick, Ireland's tallest hotel, has taken on Peter Jackson as executive chef.

He joins after taking some time out for personal projects.

Jackson previously worked as sous chef in the Castletroy Park Hotel, and sous chef for local chef John Ryan.
