Raimbault to revamp menus at Choupana Hills

Madeira's boutique hotel and spa Choupana Hills is giving its menus an overhaul with the help of two-Michelin-starred French chef Stéphane Raimbault.

The chef, who owns L'Oasis restaurant at La Napoule in the French Riviera, was hired as a consultant to revamp the food in the Portuguese hotel.

The result is a new menu split into three sections - healthy and vegetarian options, traditional Portuguese and Madeiran specialities, and Eastern/Oriental cuisine.

The hotel, where the accommodation consists of tropical-style bungalows on stilts, has also taken on a new sommelier, Sandra Fernandes, who trained at L'Oasis and the Vineyard at Stockcross in Berkshire.

Raimbault won two Michelin stars for L'Oasis in March 1992, just nine months after it opened.
