Rémy Martin competition challenges teams to create dessert pairing

Rémy Martin has launched a competition challenging the UK's top pastry chefs and sommeliers to collaborate in creating an innovative dessert to be paired with its XO cognac.

Concepts should be submitted online by 20 May, after which leading industry figures, including two-Michelin-starred chef Claude Bosi, will whittle down the entries to a shortlist of 12 teams. Those shortlisted will attend a "sensorial event" hosted by Rémy Martin to provide further inspiration.

Three weeks later the final of the competition will be held in London, where five teams will be selected to present their creations at an exclusive event attended by VIPs, press and influencers, before being whisked away for a five-star Rémy Martin experience in Cognac, including a journey into the cellars with master blender Baptiste Loiseau.

The competition is open to pastry chefs, at a minimum level of chef de partie, and sommeliers with WSET accreditation or equivalent, working together at a restaurant that lists Rémy Martin products. Entrants must have consent from their employers to list the pairing on menus for three months if they are selected as a winner.
