Shane Hughes hosts Easter pop-up at the Salutation hotel ahead of restaurant launch
Chef Shane Hughes will be hosting an Easter pop-up at the Salutation hotel in Sandwich, Kent, ahead of launching the hotel restaurant this June.
The pop-up will take place from 13 April to 16 April over the Easter weekend with the hotel's new head chef creating a seasonal spring tasting menu, using many local Kent ingredients and suppliers.
Priced at £98 per person, the menu will include matched wines and will feature dishes such as seared hand-dived scallop and slow-cooked ham hock with homemade piccalilli and sweet mustard dressing; beef Wellington with dauphinoise potatoes; and dark chocolate and morello cherry cream gâteaux with pistachio and hazelnut parfait.
Hughes spent seven years at Ynyshir Hall in Powys, Wales, where he achieved a Michelin star as head chef, and most recently was at Thackeray's in Tunbridge Wells as head chef since 2014 with restaurateur Richard Phillips. His arrival at The Salutation in Sandwich is part of a major renovation and enhancement programme to make the hotel and restaurant a key destination dining and hotel experience.
The 17-bedroom boutique hotel, owned by Channel 4 Gogglebox cast members Dom and Steph Parker, is under new management with director John Fothergill and has been undergoing a significant refurbishment of the bedrooms, dining room and kitchen.
Sir Edwin Lutyens designed and built the Salutation in 1912 as a country retreat for the three wealthy Farrer brothers, and in 1950 became the first 20th century building to be granted a Grade I-listing by English Heritage.
