Simon Henbery joins Chelsea Brasserie as head chef

The Sloane Square hotel has appointed Simon Henbery as its new head chef at the Chelsea Brasserie. Henbery will develop the current menu to feature modern eclectic European dishes such as summer beets with pancetta, chilli and Lancashire cheese; and roast hake with basil crumb and aubergine funghetto. Henbery was previously at the Flemings hotel in Mayfair.
