Successor appointed in the kitchen at Von Essen's Ynyshir Hall hotel

Shane Hughes is to replace Adam Simmonds as head chef at Ynyshir Hall country house hotel, owner Von Essen confirmed today.

Hughes was head chef at the Talland Bay hotel in Looe, Cornwall, which had three AA Rosettes, before joining the Von Essen property in Eglwystach, Powys.

He also worked as head chef at Michelin starred Le Poussin restaurant in Brockenhurst, The New Forest, until September 2005.

Hughes said: "It's an exciting time for the hotel with the redevelopment of the property well under way to increase guest accommodation and to add new spa and leisure facilities."

Simmonds, who leaves his role at the end of the month and won the property a Michelin star, said last month that his decision to go had coincided with Von Essen's acquisition of the property and he felt that now was the right time for him to move on.
