The Old Palace hotel, Lincolnshire to open new restaurant

A new restaurant is being launched at The Old Palace hotel in Lincoln this summer.

After the success of a pop-up version created for Valentine's and Mother's Day, the restaurant will focus on British cuisine and will use locally sourced and grown produce from around Lincolnshire.

Open to members of the public as well as hotel guests, head chef, Paul Newton said: "Our aim is to offer freshly prepared, locally-sourced food which is cooked to perfection. I'm not interested in experimenting with unusual combinations or creating fancy dishes made from ingredients you've never heard of. I want to cook good honest food which tastes delicious."

He added: "Lincolnshire produces more fresh food than any other county in the UK and the quality and flavour is superb. We want to work with as many county-based farmers, growers and producers as possible to demonstrate just what Lincolnshire has to offer."

The Old Palace opened as a 32 room boutique hotel in March 2012. It has previously catered for private dining clients, conferences and events, but has not featured an on-site restaurant before.
