Tom Illic named as executive chef at Apex City

Chef Tom Illic has reappeared on London's culinary map as executive chef at Apex City, the latest hotel to open in the Square Mile.

Illic will head up the hotel's fine-dining restaurant, Addendum, and its brasserie, both of which will serve European food.

Average spend at the 60-cover fine-dining restaurant is expected to be about £35 a head without wine, while at the 50-seat brasserie it will be £25.

Illic was formerly executive chef at Bond's in the City, and before that he worked at the New End in Hampstead and at contract caterer Searcy's.
