Two senior appointments made at luxury Oitavos hotel in Portugal

The Oitavos, a new five-star luxury hotel and spa in Portugal, has made two senior appointments.

Aimé Barroyer has become executive chef to head up the food and beverage operations at the hotel, located on the Quinta da Marinha Original estate near Lisbon, overlooking the West Atlantic coastline.

Barroyer joins the Oitavos from the Valle Flôr restaurant in Lisbon where he was the executive chef for nine years. Other experience includes four years at the Ritz in Paris, nine years in the USA at L'Ermitage Restaurant in Los Angeles and the Bouley Restaurant in New York, four years with Paul Bocuse in Lyon and three years at the Tour D'Argent in Paris.

Meanwhile, Stephen Roughley (pictured below) joins the Oitavos as general manager from the JW Marriott Las Vegas Resort and Spa, where he was director of operations for eight years.
