Watch head chef Neil Armstrong make the Taste of Manchester signature dessert at Radisson Edwardian Manchester's restaurant Opus One.
Taste of Manchester (serves 5)
Ingredients Soft butter, 50grm
Nutmeg to taste
Candied mix peel, 30 grm
Demerara sugar, 65grm
Puff pastry (small discs) x 5
Method Take all ingredients and bind together into small balls, and then wrap the fruit balls in puff pastry then cook in oven at 180c for 10 mins
Ingredients Small tartlet case x 5
Strawberry jam, 50 grm
Toasted coconut, 5grm
Method Start by filling the tartlet cases with the strawberry jam, following this place a slice of banana on top then cover with custard and dust with toasted coconut.
Ingredients Banana, 1
Black grapes, 10
Blue berries, 10
Stock Syrup (sugar and water), 50ml
Method Place all ingredients in food processer and blitz for one minute.
Ingredients Egg Yolks, 125grms
Caster Sugar, 125grms
Double Cream, 375ml
Method Whip cream to a peak and store in fridge. Whisk egg yolks and sugar into ribbon stage. Fold egg mix into cream. Add vimto. Pipe mix into moulds and freeze.
